Apple Pie (For this pie I use Golden Delicious apples)

INGREDIENTS

Pastry for 9 inch - 2 crust pie
6 medium apples, pealed, cored, and sliced
1/2 cup sugar
1/2 cup brown sugar
1/2 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp salt
2 tbsp cornstarch


DIRECTIONS

In a small bowl, mix sugar, brown sugar, cinnamon, nutmeg, salt and cornstarch. Place apple slices in a large bowl. sprinkle seasoning mix over apples, and stir until all the apples are well coated. Place apples in pastry covered pie pan. Fruit should be well rounded in pie pan. Cover with top pastry and seal and trim. (For a dark golden crust, you may brush top with egg wash made by mixing 1 egg yolk with 2 tablespoons water). Make about 6 small vent cuts in top pastry. Bake in very hot oven (450 degrees) for 10 minutes. Reduce heat to 325 degrees, and continue baking for about 40 minutes.
