Sweet and Sour Chicken

Ingredients


1 pound boneless chicken breast, cut in 3/4 inch cubes
1 egg well beaten
1/2 cup all purpose flour
1/2 cup oil
1/4 cup brown sugar
1/3 cup vinegar
3/4 cup pineapple juice
1 tbsp soy sauce
2 tbsp corn starch
1 can pineapple chunks, drained
3 tbsp pineapple juice
1 green bell pepper, sliced
1 red bell pepper, sliced

Directions

Dip chicken cubes in egg and roll in flour, coating well. Fry chicken in hot oil until brown, and remove from pan placing on towel. Sauté peppers until just tender, and remove from pan. Drain any remaining oil from pan. Combine in same pan sugar, vinegar, 3/4 cup pineapple juice, and soy sauce. Bring to a boil. Blend corn starch in 3 tbsp pineapple juice and gradually add to sauce. Continue to simmer sauce stirring constantly until it thickens. Stir in chicken cubes, pineapple chunks, and peppers. Heat through, and serve over hot rice.
