Sourdough Pancakes

Ingredients


1 large egg (lightly beaten)
1/2 teaspoon salt
1 teaspoon sugar
2 tablespoons hot water
1 teaspoon baking soda
2 teaspoons butter (melted)
vegetable oil

Starter

2 1/2 cups all-purpose flour
1 1/2 teaspoons yeast
2 cups whole milk

Directions

In a bowl whisk together 1 1/2 cups of the flour, yeast and one cup of the milk. Let mixture stand in a warm place, covered loosely, overnight. Whisk 1/2 cup of milk into the starter. Dissolve baking soda in 2 tablespoons hot water. Add to the starter, remaining flour, egg, salt, sugar, baking soda mixture, butter and remaining 1/2 cup milk; whisk until the mixture is combined well. Heat griddle until hot but not smoking, brush with vegetable oil. Ladle batter by 1/4 cups onto hot griddle and cook the pancakes for one or two minutes or until bottom is golden brown. Turn the pancakes over and cook an additional minute or until golden brown.
