Rotkhol (Red Cabbage)
INGREDIENTS
3 pounds red cabbage (shredded)
3 sour green apples
1 large onion
1/4 cup lard
3 cloves
1 bay leaf
Salt to taste
4 tablespoons sugar
5 tablespoons white vinegar
1 cup white wine (chicken broth may be substituted)
DIRECTIONS
Peel, core and chop apples. In a large pot, cook onions in lard on medium heat until tender. Add shredded cabbage, apples, vinegar, white wine or broth, sugar, salt, cloves and bay leaf. Bring to boil, cover and simmer on low heat for two to three hours. Remove bay leaf. (If there is too much liquid when cabbage is done, add a small amount of cornstarch to thicken).
