Red Velvet Cake
Ingredients
1/2 cup shortening
1 and 1/2 cups sugar
2 eggs
1 teaspoon vanilla
1 teaspoon butter flavoring
1 bottle of red food color
3 level tablespoons cocoa
2 and 1/2 cups sifted cake flour
1 cup buttermilk
1 teaspoon salt
1 tablespoon vinegar
1 teaspoon baking soda
Directions
Cream shortening, sugar, eggs, and flavors. Make a paste of cocoa and food coloring. Add to first mixture. Alternately add flour and buttermilk. Mix baking soda and vinegar in small bowl; add to batter. Blend. Bake in three 9 or 10 inch floured cake pans for 20 to 25 minutes at 350 degrees. Let cool completely.
Frosting Ingredients
2 packages softened cream cheese (3 oz. each)
6 tablespoons butter, softened
1 teaspoon vanilla
2 cups powered sugar
For the frosting, blend all the ingredients until smooth.
NOTE: I prefer a commercial white frosting.
