Pumpkin Pie

Ingredients


Pastry for 9 inch deep dish pie
1 can (15 oz) pure pumpkin
2 teaspoons cinnamon
¾ cup brown sugar
½ teaspoon ginger
½ teaspoon salt
1 can (12 oz) evaporated milk
2 well beaten eggs

Directions

Combine pumpkin, cinnamon, sugar, ginger and salt. Slowly add milk and beat until thoroughly blended. Stir in eggs, and pour mixture into 9 inch deep dish pie shell. Sprinkle top lightly with cinnamon. Bake in preheated oven (350 degrees) approximately 50 minutes or until when a tooth pick inserted into center comes out clean. NOTE: 6 oz whole milk and 6 oz heavy cream may be substituted for evaporated milk, and 2 ½ teaspoons of pumpkin pie spice may replace cinnamon and ginger.
