Mississippi Mud Cake
Ingredients
2 sticks butter
3 cups sugar
3 Tbsp Cocoa
4 eggs
1 tsp vanilla
1 1/2 cups chopped pecans
1 1/2 cups coconut
1 1/2 cups flour
1 jar marshmallow cream
Directions
Cream butter, sugar, and cocoa; add eggs and vanilla. Mix well. Stir in coconut and nuts. Blend in flour a small amount at a time until all the flour is used. (Batter will be very stiff). Turn into a 9 X 13 inch pan and bake in 350 degree preheated oven for 30 to 35 minutes. (Do not overcook). When cake is done, spread marshmallow cream evenly over hot cake. Let cool completely.
Frosting
1 stick butter
1 box powder sugar
1 tsp vanilla
1/2 cup condensed milk
1/3 cup cocoa
Beat all ingredients together until smooth and spread on cooled cake.
