Mandarin Chicken

Ingredients


1 chicken (cut up)
½ cup flour
2 teaspoons salt
1 teaspoon paprika
¼ teaspoon ground pepper
½ cup oil for frying
¼ teaspoon ground cloves
¼ teaspoon ground nutmeg
1 tablespoon water
¼ cup flour
½ cup water
1 cup pineapple juice
1 cup orange juice
1 small can mandarin oranges (drained)
½ cup pineapple cubes
½ cup sliced almonds

Directions

Blend ½ cup flour, salt, paprika and pepper in plastic bag. Drop chicken, 2 or 3 pieces at a time, into plastic bag and shake to coat evenly. Heat oil in heavy skillet. Brown chicken turning as necessary to brown evenly. Sprinkle with cloves and nutmeg. Add 1 tablespoon water. Cover tightly and cook over low heat until thickest pieces are fork-tender, 25 to 30 minutes. Turn pieces as necessary to cook evenly. Blend ¼ cup flour and ½ cup water until free of lumps. Blend in pineapple and orange juice. Cook in saucepan until thickened, stirring constantly. Add pineapple cubes, orange sections and almonds. Pour over chicken and cook over low heat, uncovered, about 10 minutes to blend flavors. Serve over rice.
