Fried Frog Legs

Ingredients


Vegetable oil for frying
2 doz. large frog legs
1 tsp. red pepper
2 tsp. salt
1 cup corn meal
1 cup flour or fish fry
4 eggs
1/4 cup milk

Directions

Pour oil in deep fryer or cast iron Dutch oven to depth of 2 to 3 inches. Dry frog legs. Season with salt & pepper. Mix cornmeal and flour. Mix eggs and milk in another dish. Roll each frog leg in flour mixture, then in egg mixture and lightly in flour mixture again. Deep fry 5 or 6 legs at a time turning for even brownness and crispness. Serve with hush puppies and potato salad.
