Dirty Rice
Ingredients
1 cup white long grain rice
2 & 1/2 cups chicken stock or broth
4 table spoons butter
6 ounces chicken gizzards
6 ounces chicken liver
6 ounces ground pork
1 cup finely chopped onion
1/4 cup chopped celery
4 cloves chopped garlic
1/2 teaspoon cayenne pepper
1 teaspoon salt
Directions
Bring 2 cups of the broth to a boil and add rice. Cover, reduce heat and simmer for 15 minutes. Remove from heat and set aside. Chop gizzards and liver. Melt butter in a large skillet. Add pork, gizzards and liver and cook until lightly browned. Add onions, celery, garlic, pepper and salt. Stir often and cook for about five minutes. Add 1/2 cup broth and rice. Stir, cover and simmer over low heat for about 10 minutes or until liquid is absorbed.
