Country Chicken
Ingredients
2 cut up fryers
1/2 cup oil
1/2 pound smoked ham, diced
1 cup chopped onion
1 green bell pepper cut into strips
1/2 pound fresh sliced mushrooms
2 teaspoons salt
1/2 teaspoon black pepper
4 cups water
5 garlic cloves
1/4 cup fresh parsley
1 bay leaf
1/2 teaspoon dried thyme
4 fresh tomatoes cut into wedges
2 teaspoons lemon juice
6 tablespoons flour
6 tablespoons soft butter
Directions
In a four quart pot brown chicken in oil and remove from pan. Cook ham, onions, green pepper and mushrooms lightly in pan drippings. Return chicken to pan and add salt, black pepper and water. Tie garlic, parsley, bay leaf and thyme in a cloth bag and place in pan. Cover and simmer for about 45 minutes or until chicken is tender. Remove cloth bag and add tomatoes and lemon juice. With a fork, blend together the flour and softened butter. Add this to pot, and while stirring, cook until thickened. Serve with mashed potatoes and a side dish of green or yellow vegetables.
