Chicken Sauce Piquant
Ingredients
2 chickens (3 lbs. Each)
3 cups cooking oil
4 cloves garlic, chopped fine
1 bunch green onions, chopped
3 cans tomato sauce
1 cup celery, chopped fine
3 lb. Onions, chopped
1 cup bell peppers, chopped fine
Salt, red pepper, black pepper to taste
Directions
Measure cooking oil and pour into large cast iron pot. Cut chicken into serving sizes and season with salt and pepper (red & black); brown in cooking oil. Remove chicken from pot and place in a pan. Brown onions and garlic in oil, then add chicken. Pour tomato sauce over chicken and add chopped celery and green onions. Add enough water to cover ingredients and lower heat to simmer. Stir about every 10 minutes. Add a small amount of Roux to thicken gravy if desired. About 1 hr. before chicken becomes tender, add bell pepper. Serve with rice. Serves approximately 12 people.
