Chicken and Sausage Gumbo
INGREDIENTS
1 whole chicken, cut up
1 package smoked sausage, cut into 1/2 inch slices
1 large bell pepper
2 bunches green onions, chopped
1 large onion, chopped
5 cloves garlic, minced
1/4 cup parsley, chopped
2 tablespoons chicken bouillon
1 teaspoon salt
dash black pepper
1 teaspoon ground red pepper
3 tablespoons file powder (ground sassafras leaves)
6 tablespoons shortening
6 tablespoons flour
DIRECTIONS
In a large pot, bring 4 quarts water, salt, pepper, smoked sausage, and bouillon to a boil. Simmer while you prepare the other items. Wash and pat dry the chicken. Brown chicken in a little oil, and set aside.
MAKE A ROUX:
Mix shortening and flour in skillet. Stir mixture over medium heat, and brown until it's the color of brown shoes. Remove from heat and add bell pepper, onions, parsley and garlic. Stir well and set aside.
Add chicken to large pot and stir in roux and vegetables. Cover and simmer until chicken is tender, stirring often. Stir in file during last five minutes of cooking.
Serve over rice.
