Blackberry Dumplings

Ingredients


1 qt fresh or frozen blackberries
1 cup plus 1 tablespoon sugar
3/4 tsp salt divided
1/2 tsp lemon extract
2/3 cup milk
1 and 1/2 cup all purpose flour
2 tsp baking powder
1/4 tsp ground nutmeg
2/3 cup milk (cream optional)


Directions

Preheat oven to 400 degrees. In a Dutch Oven, combine the blackberries, 1 cup sugar, 1/4 tsp salt, and lemon extract. Bring to boil, reduce heat and simmer for 5 minutes. In a mixing bowl, combine the flour, baking powder, nutmeg, 1 tbsp sugar, and remaining salt. Add the milk, and stir just until mixed. Dough will be very thick. Drop by tablespoonful into the hot blackberry mixture making six mounds. Bake at 400 degrees for 35 to 45 minutes.
