CHICKEN CORDON BLEU

Ingredients


4 (10 oz) chicken breasts pounded out to ½ inch thickness
8 ounces thin-sliced ham
4 ounces Gruyere cheese

BREADING

1 ½ cups all-purpose flour
1 cup wheat flour
½ cup rice flour
1 cup ground bread crumbs (biscuit preferred)
1 teaspoon garlic powder
1 teaspoon salt
1 teaspoon fresh ground black pepper
1 teaspoon paprika
1 teaspoon Cajun seasoning
½ teaspoon cayenne pepper

EGG WASH

6 eggs well beaten

Directions

Preheat oven to350 degrees. Into center of each piece of chicken place 2 ounces of ham and 1 ounce of Gruyere cheese. Roll the chicken breast up tightly and place tooth picks into each end and middle. Place in an oiled baking dish and bake for 18 minutes. Combine all breading ingredients, mix well and place on a large platter. After chicken has baked place in egg wash coating well. Roll chicken in breading, and repeat process. Deep fry at 325 degrees for 3 minutes or until golden brown. To serve Cordon Bleu place on a bed of rice, and drizzle flour gravy over it.
